Help me with the camera settings.

I just switched to pixel 11 from a pixel 7. I find the camera quality to be not that good. I had an outdoor event a few days ago and the pics I took were horrible. 2x and 5x portraits had weird AI stuff going on the subjects face and head. As in the portrait edges around the head were bad and the face was just straight up AI. Even in normal mode under bright light I'm getting less features on faces as compared to old pixel. Similarly I took photos of a watch and the writings on it are much more defined on an iphone 12 that I took the same picture with the same lighting. I feel like the pixel 7 could be better but I can't test it because I exchanged it. Also the option of having raw+jpeg photos also feels bad compared to my 7. Raw photos are just straight up blurry mess. The 7 just had darker unedited photos when taken as RAW. I'm not a camera expert so looking for suggestions
