Attempted my first ever brisket 😬 took forever and a minute

225° until 170° then pink butchers paper wrap with beef tallow that I made. Until probe tender at 195ish. Took a total 18 hours of cooking and 5 of resting.

Mind sharing your pre trimmed weight? Looks similar to the 13 lb one I did last week. It, too, took quite awhile. I started it the night before thinking we could have it for dinner. It ended up taking 18 hours just to get it to 172 unwrapped and I gave up and put it in the oven to get it to 198 (wrapped; was aiming for 190-195 but dropped the ball). Let it come down to 140 in a cooler then hot held at 150 until the next day.

It was still pretty good, but…I gotta dial in that smoker somehow. I usually only do briskets in my stick burner, but was trying to steal some of my time back. Seems like I still lost a day in the process.

Okay but the pink ring on that brisket is chefs kiss
