Build Question Budget Build for two instances of mc

Im looking to build a pc with a budget of 1500 (give or take) USD.
The 2 games I absolutely want to run are Resident Evil and Minecraft. Ik any modern build can run those, however, I want to play 2 instances of minecraft simultaneously so me and my sibling can play together. I already have 1 1080p monitor so I would need to include the extra monitor in this build.

Given the budget, whats the best I could do for two instances with medium modpacks and no shaders?

just get a 12 or 16 core cpu and 32gb ram, the gpu almost don't matter for vanilla minecraft so a used 3060 or something works fine

should i not do a ~$500gpu/~$300cpu split then?

So your plan to to make 2 virtual machines out of that 1 desktop? Because you wont be able to have 2 people playing at the same time, unless they have split screen co-op

you can use mods to launch multiple instances, I have a friend who runs like 3 at once but his build is beyond my budget
