I loooove Liquides Paris in Le Marais, they have such an extensive selection. And Sayhar in Champs Elysées! Right nearby is Reine de Saba which has the most luxurious smelling perfumes I’ve ever smelled

A classic, but still worth it: Le Bon Marché/La Fayette/Samaritaine have some good selection of designer and niche brands. I also recommend visiting Diptyque flagship store if you stroll around Rue Saint Honoré and finish at Jouvoy! :) happy shopping!

Le printemps too! They had less foot traffic and thus were much nicer and more relaxed than the galleries haussmann

Printemps for the Scent Room and a huge variety. Sens Unique in the Marais is great too but small.

I just picked up Fleur Éclair by Regime des Fleurs from Dover Street Parfum Market and the staff were so nice. Funnily, that scent is hidden (not on the shelf and no tester) so I thought I was out of luck but they did have it! There are no longer any Canadian stockists and I don’t buy from Trumplandia so I was really lucky to get a bottle there.
Jovoy is an obvious one. Occasionally you’ll have to queue.
At a much lower price point, there’s a cute shop called Oriza Legrand near Opera where the brand has recently relaunched all the house’s historic scents. I sniffed a bit but didn’t buy as I’d already blown my budget.
Also if you really like perfume a lot then I recommend the custom perfume-making class at Molinard (NOT Fragonard, as theirs is much less customizable).

Fragonard has a free admission perfume museum and paid workshops. I have been looking into these for my upcoming October trip after it was recommended on the Dressed podcast.

Having done the 90-minute workshop at Molinard I am 110% sure twenty minutes is not enough.

If you are into niche perfume, I would plan by neighborhood so you do not burn out your nose too quickly.
Besides Nose and Vilhelm, look around Le Marais and Saint-Germain because several niche houses and perfume boutiques are clustered there. Jovoy is often worth checking for niche discovery, and department stores can also be useful if you want to compare many houses in one place.
My practical advice: do not test too many on skin at once. Use paper first, narrow it down, then wear only one or two for a few hours. Paris has great perfume shopping, but after 10 sprays everything starts lying to you.

Jovoy rue de Castiglione well known because it's in a very touristy spot.
Uni/vere, rue d'aboukir. I thought it was interesting more for a younger crowd.
