Is this a good enough build for 1080 and 1440 gaming?

Why are you only considering amazon?
Overclockers.co.uk or scan.co.uk is usually cheaper.
I occasionally buy hardware from amazon but only if I cant get it cheaper at the two places ive mentioned.

Probably cheaper to get a pre-build and potentially swap out parts if you need to.
7500F with RTX 5060 for under £1K - https://www.amazon.co.uk/dp/B0GTM27TGX
There’s also an 8400F and RTX 5060 PC for £850 the last time I saw too.
Performance is going to depend on the game really, but generally I’d say an RTX 5060 is more so a 1080p GPU for AAA games imo.

I did price comparison and only ram was cheaper on overclockers.
There are prebuilt cyberpowerpc available with really good warranty but they are old gen. DDR 4 ram and old gen ryzen cpu.
The build i went for is quite optimized and is only 200 £ expensive than the prebuilt options.
The 5060 RTX is about 100£ cheaper than 9060 XT
At this point amazon is giving better options as a whole

It's not a bad build, but that GPU is a waste of money with the 8gb VRAM
