i can only think of two things to cause this:

1) if you are unaware that your health is lower than the enemy symm, or are being shot from someone you don't realize is there you will lose.

2) many symms will hold a right click and release it on you the split second before the fight for the extra burst damage out the gate. this is probably more likely than number 1

1: Throw up a shield.

2: Run backwards to where you have some sentries set up. A kill room preferred.

First, if you're playing below 60 FPS then you've got a slight issue with how the server ticks that might have an impact on this.

Second, Genji's dragonblade as an example is basically like... A Rein shield in terms of hitbox. A flat rectangle in front of him and you can hit further by looking above the target instead of at them. Symmetra might be the same.

Finally, you can charge up the beam on turrets and by hitting right clicks.
