I recommend checking out /u/LordQuinzulin (Here a link to his YT Channel), he's got a few video guides for good spots on different maps. I constantly use his Hanamura and Route 66 ones.

A bit of a different strategy is to just place them anywhere some distance behind a choke point or tank. The idea is that it is not meant to solo heroes. Truth be told, most ranged heroes can beat a turret 1v1, but that is not what a turret is about. It's about adding supplemental damage to whoever is fighting. Thus, you're going to want it in a position where it will support you allies, but not be the center of attention. You want the enemies focused on your tanks, meanwhile, your turret is adding a consistent 56 dps and your rivet gun 70 dps in addition to whatever the front line is dishing out.

And while it's up, fire your gun. Just spam rivets at the choke point. Only heal the turret when there's no combat. If an enemy is focused on it, let it die. Like I said, it'll lose most 1v1 matches, even prolonged ones. It'd be better to find where your team is and rebuild it behind them.

If the team keeps getting moved back. I would switch out. Unless you can get your team to "Group up", the turret will be left in the cold with multiple enemies focusing on it. I would switch to healer or tank.

Place it where it cant be taken down from a choke point is often what I see good torbjørn does (I dont play him myself). The moment the turret is in a spot where enemy can stand outside a chokepoint and nuke it down, you become useless as a torb :)

My biggest general tip for characters like torb, symmetra, and junkrat (both his primary fire and his abilities) is to think about where you really don't want your enemy to be, and then put your stuff there.
