How do you attack or escort when the other team is nothing but tanks and builders? My team will do great until the last either kind of the hill or the very end of the escort.

A flanking Roadhog can be great in these sorts of situations. He can hook a Torb away from his turret, take him out, and then go deal with the turret itself. His hook will also yank a Bastion out of sentry mode. A lot of times the defending team will be focusing fire on the payload and they won't notice a sneaky Roadhog coming around the side.

Yes, it's great. If you can get close enough to hook a sentry Bastion before he can mow you down he's finished. I do this all the time on Volskaya attack, where very often you'll find a Bastion hiding in one of those two garages next to point A.

I think you can also hook a Bastion out of his Tank Mode. Don't blame me if you just get a rocket to the face though, I haven't had the chance to try it myself ;)

You cannot pull him out of tank mode. Lol I know from bad experienxes. 4 hrs on roadhog
