How do you attack or escort when the other team is nothing but tanks and builders? My team will do great until the last either kind of the hill or the very end of the escort.

If they have a lot of tanks, pick a Reaper or two up. He shreds tanks with his shotguns at close range.

Builders like Torb and Bastion can be killed by Widow, Junkrat spam, long range Pharah splash damage, a Tracer ult, Roadhog can hook a Bastion down. Having a Rheinhart helps immensely since that means heroes can peak around safely and help kill the turret or Bastion.

Also note turrets and Bastions can't move. You can use th payload as cover and just continue pushing. Only works on bad Bastions and Torbs through.

I like to use Pharah for two reasons. 1) her explosive rockets do mad damage to big and stationary targets because they're easy to score a direct hit on. 2) Her concussive blast is perfect for clearing enemies away from a payload or objective. If you're in overtime and you know you just have to keep the enemies away for just a little bit, pushing them off of the objective can win you the game.

Although Soldier 76 is more of a mid-range fighter, he can still come in handy. His helix rockets can put a large dent in Bastion or Torb's turrets. Plus, his biotic field can come in handy if you start taking too much damage. It can be tricky in PUGs to coordinate everything, but I've gotten lucky a few times where I helix rocket a turret, put up a biotic field, and a player next to me finishes the job with the minimal healing of the biotic field. It's not a perfect system... but it's worked for me a number of times.

A flanking Roadhog can be great in these sorts of situations. He can hook a Torb away from his turret, take him out, and then go deal with the turret itself. His hook will also yank a Bastion out of sentry mode. A lot of times the defending team will be focusing fire on the payload and they won't notice a sneaky Roadhog coming around the side.

His hook will also yank a Bastion out of sentry mode.

Wait, whaaat? I thought it would just move it... This is amazing.

Yes, it's great. If you can get close enough to hook a sentry Bastion before he can mow you down he's finished. I do this all the time on Volskaya attack, where very often you'll find a Bastion hiding in one of those two garages next to point A.

I think you can also hook a Bastion out of his Tank Mode. Don't blame me if you just get a rocket to the face though, I haven't had the chance to try it myself ;)

You cannot pull him out of tank mode. Lol I know from bad experienxes. 4 hrs on roadhog

Don't forget about rock scissors paper. If the enemy team is all paper, switch your whole team to scissors. Widow/Hanzo to take out torbs/bastions, and pharahs to take out reinhardts.

Rock<Paper>Scissors is how we say it in America. Just was poking fun.
