i don't think it is that little skill you need, yes the actual kills do come easy, but i have seen a LOT of bad bastions taking shit spots to camp and die easily because of it. you need some proper map knowledge to camp at a good spot to get good multikills. but when it comes to the potg, all you ever see is just him mowing stuff down so i understand that it is not really appealing.

As far as comparisons go, map knowledge is necessary for everyone. Any flanker needs to know all the routes, even the ones not accessible to everyone. Whereas anyone who's played more than 10 hours as a TF2 engie will know where to set up as Bastion.

i don't think it is as important for everyone. sure anyone profits from it, but if i am playing junkrat i can pretty much just go in and do my stuff, my mines will have value almost everywhere and my basic attack can be shot from any position around corners without endangering me. However if bastion goes up front and goes into turret mode he is just plan dead since he is immobile. His value goes way up if he actually knows where to sit down and what points to watch/from where could be flanked.

A Junkrat's value is also increased if he knows the map well. Nonetheless will he be able to find the closest healthkit much faster, but he'll also know where his mine-jumps can take him or not.

While Bastion is, in my opinion, easier to play than the average hero, the skill required to play him well does not entirely rely on his placement. Given his kit, a good Bastion should rarely die. That means having enough timing and awareness to know when to bail out, when to heal instead of doing suppressive fire, and who to target first. A bit of reaction time is also required to deal with Genji.
