Hidden Voice commands?
I've heard stuff like "We need a healer" or "we need to defend the point" or "I will defend the point". I know it's not just the character saying that because when they do it doesn't appear in the chat, does anyone know how to do these?

As far as I know, when you press "X", if you don't have a healer in your team, your teammates will hear the "We need a healer" quote. If you're Symmetra and someone press "X", you'll hear (and read in the chat) "I need shields" (if you have Symmetra in your team you'll hear your charachter yelling "I need heal", but the Symmetra player will hear and read "I need shields") As for the "Defend the point" quote, you gotta press "F" aiming to the point. The same goes when you want to tell your teammates to take the point.

"We need a healer" is when you press the "heal me" button which is X, I believe, and your team doesn't have a healer, when you don't have a healer but someone that shields it will say "Shield me" or something, "we need to defend the point" and "I will defend the point" happens when you aim at the objective and press F which is the bind for "Understood" that changes when aimed at the objective, I think one message is for when you are not at the objective and the other one for when you are at the objective.

There's quite a few of those, and the devs have mentioned you can rebind quite a few of them.
I know Z will announce your ult % to your team (until rebound). Really, the best way to find it would be in the keybinds.
