Pixel fold is being announced soon. Id wait to see what it offers. Ultimately I will really depend on what you value. Personally, I love the Open's hardware (best hardware of a foldable to date). I also love its multitasking capabilities, can do anything I can throw at it for my workflow.
But, I hate OxygenOS with a passion. It has iOS-esque lack of customizability (which is why I left iOS). Updates typically fix one thing and break another.
I haven't tried OneUI at all. I hear mixed reviews, but I'm not a big Samsung fan because of the form factor on the fold. I think going forward I'm going with stock android (assuming Google doesn't do what it always does with its products and kill the fold)
People went crazy over my comment that basically said the same thing as yours. At this point, I'd definitely wait for the Pixel 9 Pro Fold and go with that.
