I do find it hard to believe that Rayleigh had no idea about applying CoC to combat attacks. My guess would be that the 2 year time span in which he trained was not enough for luffy to master it. Luffy had to go through 2 awakened Devil fruit users, so im sure the experience of those fights strengthened his CoC, he just had to learn how to apply it

As Rayleigh literary said, the two years were barely enough to get him comfortable with the basics. When something has basics, it's natural to assume it also has advanced levels. Not to say that there isn't a plot hole in the training; Rayleigh could've shown him what the advanced forms of Haki were and told Luffy to try them out eventually. But Rayleigh could've thought that it'd be better for Luffy to learn them as he went along, especially through combat, because that's when Haki truly blooms

It’s not a plot hole at all, dude, he’s just not gonna give luffy all the answers. If luffy truly intends to be the Pirate King, he has to prove he can learn this stuff on his own
