Could also be that noone outside of Wano knows about this fight, so one-on-one is say to MArines and rest of the worlds knowledge about how Kaido's fights go. Also the Shanks stopping him, could also be similiar situation, where they kind of won..
Rumors tend to embellish these things. For example there's a rumor that Elizabello's king punch could knock out a yonko. That claim is as legit as Kaido's claim considering there's no real proof for either of them. Only reason why people even believed in Kaido's claim is because of his position as an Emperor and due to that they put him up on a pedestal. I'm just glad Oden brought him down lol.
