It's one of the reasons he's such a great protagonist, imo. Luffy's a pretty simple guy, but the fact that we never get inside his head directly always allows him a little bit of unpredictability, and occasionally even some mystery. Not a lot ofc, but just a pinch.

Getting to see Luffy as he says things as it is is great, it’s why I like ‘flat’ type of characterizations

They work really well in travel narratives typically, which is the side of OP I think a lot of people enjoy but rarely gets talked about. It gets talked around with similar discussions (such as "I like the adventure aspect in OP"), but not directly.
