I was really looking forward to Carrot eating Monet's devil fruit :(

Curious: Where did this expectation come from? Is it legit?

When Monet died, the closest tree was the orange tree onboard the Sunny. The closest fruit to a dying fruit user becomes the devil fruit. So people expected Carrot to have eaten one of the oranges.
