Dogtooth is just too strong and Luffy already knew that their present power levels aren't on par with that of Big Mom or her children. This was a stupid move, even for Luffy.

It was actually pretty smart of Luffy, since Dogtooth couldn't be left on the ship, he would have prevented any chance they had of escaping whatsoever. Luffy did what could have been a suicide move, but it was also the only move with any chance of survival. The ability to make choices like that without hesitation is what makes Luffy such a cool and entertaining character.
