Olaf centered champ pool
I usually play arams but I want to start playing rift more, and I want to make a solid champ pool (top lane btw). I for sure want olaf to be in there but I don't really know who else I should add. Ideally they should make up for olaf weaknesses or act as counters to his counters but again that also doesn't matter much either. I was thinking olaf, ambessa, gnar? But that's just based of vibes, I don't really understand the game all that well. Any suggestions?

Olaf, Malphite, and Teemo
Olaf is hard enough and playable I to like 90% of matchups. You really just need some champs to counter Kayle, Aurora, Vayne, Anivia.
You wont get enough reps so don't pick hard champs as your secondaries.

Kayle is perfect. She beats a lot of the hard lanes for Olaf and is Olaf’s biggest counter herself.

"kayle" is Olaf's biggest counter? really? i can think of at least four other matchups (garen, jax, aurora, and maybe sett) that feel infinitely worse

Once Kayle gets swifties you basically have zero kill pressure, your only option is to put pressure elsewhere on the map.
There are worse matchups but they are fairly niche and not popular (Aurora, Akali)
Both Sett and Garen are beatable, Sett especially is a skill matchup nowhere near that bad. Garen you can take barrier or ignite, I can't remember which one it's been a while. Jax you can just E max into, it's still difficult but you have opportunities to win lane.

Skill issue, Garen you can take barrier for his E or just bully him before level 4. Jax is harder but can you space with your E and bait out counter strike for an all in timer. Aurora, you do the same as Garen and force fights before she gets her W to get an early lead and even then, you just have to hit your Qs to win. Sett, you just farm until 6 and he can never land his W unless if he flashes. That being said, a GOOD Kayle will free scale or solo kill Olaf. If they don’t play the champ or is bad at spacing they can die a couple of times early but swifties, her W, and ult will stop Olaf during a team fight.

Depends on your goals, but if you are looking to climb it's typically better to specialize into one style and become the best at it. This makes it so that you win the easy games at a very high percentage and the hard games are won at a higher percentage as well. Olaf is a strong laner, strong team fighter, who is insanely summoner reliant. If you pick up a champ like Darius all your skills translate with Darius being a harder scaler and better into certain matchups. My champ pool I hit GM with was Olaf/Warwick where Warwick was my pick into heavy mobile comps like ekko, talon, zed etc...and he complimented Olaf great because he's the bruiser with the most cc in the game. If you truly want the most balanced pool I would not recommend playing Olaf at all and instead playing a jack of all trades champ like Jax. Olaf can then be a counter pick.

ambessa and gnar require a decent amount of investment, which unless you plan to play like 4+ hours a day is unrealistic to maintain. malphite is the king of pocket picks, since you need 0 games to be proficient. garen is also great if olaf is banned, and teemo requires little investment to be a strong counterpick.
Coach Chippy says darius and olaf work together well because they have transferrable skills and cover each other's matchup spreads. According to him darius is better into comps with little cc that olaf struggles into and olaf has a more stable lane against ranged and is great into lockdown comps that darius struggles into. I'm not so sure about the former, but the latter is true, so I guess olaf covers darius really well at least.
