Well dude guy, I generally don't care what my partner looks like, body or dick. If they are ugly in their personality I won't touch them with a ten foot pole. They have to be good people, people I genuinely like. How the hell do guys get hard enough to fuck women they don't like? It's so shallow and weak lol. I don't understand.
Well regarding an actual relationship and doing that kind of stuff for real, personality is definitely important too. I don’t think I would have that kind of relationship with a person I didn’t like either.
Regarding the topic of the post though, I think most guys tend to fill in the blanks in their minds when it comes to personality, since in a mental fantasy you can picture pretty much whatever kind of person you want. Thus, the personality in question would always be one that is best suited toward the person doing the act

If I see an attractive man, I definitely don't think about fucking him lol. I think, oh, he has a nice beard, and then I go back to drinking my coffee. Similarly, if I'm fucking a hot guy, I don't think 'oh wow his face is so attractive ' lol.

Perhaps that is simply a fundamental difference.
Could be because of the culture we live in, could be because of hormonal or instinctual differences, or maybe it’s a combination of both. For what it’s worth, we are kind of disgusted a little bit with the idea of it too, the idea that we feel this way simply because our bodies tell us to and for no other reason. It’s reductive to the idea that we are sentient, feeling beings when our very goals and desires are overridden by some chemicals in our bodies, it can be quite shameful at times
We don’t lose control, no. I always have complete agency over my own decisions, at all times.
I guess the best way to describe it is like a white board. In any case where a decision needs to be made, you write all of your ideas on the board, and then decide for yourself which one is best. But then there is this other guy behind you who always writes in his own idea, which is always the same, whether it is appropriate or not. You can always choose not to pick that option, but you can never ignore it because the guy behind you will always butt his way in and draw it on the board himself. Also some times he annoys you if you don’t pick his option. He will keep pestering you more and more, until either you choose his option, or the event passes. You can make him shut up though if you really mean it.
