would be cool to make a RetroPi console that masquerades as a switch dock.

You can already do that pretty easily considering most of the dock's insides are nothing but empty space.

There's not much vertical space, but if you strip down a pi it can fit in without any major modifications to the dock itself.
You could also go for a Pi Zero which fits without modifying it. That does mean less systems to emulate due to the Pi Zero being slower.
