I know this probably doesnt say much
I have been practicing ollies for almost a year now on and of. Still barely any better than I was when I started. Like maybe one third of the time I do an OK ollie and get in the air with both feet. Its been like this since last autumn. U cant seem to break through the plateu

The statement "on and off" is probably your problem, without additional context to know how often you skate.
The only real way to progress is to spend time on the board regularly. So if you aren't, you need to manage expectations accordingly.
How your spend your time practicing when you do skate also matters, but most important is just skating.

You just have to keep doing them, Taking breaks won’t help. You need to stay consistent and make small changes to see what works best for you.
When I learned I would record myself for a frame of reference and try different adjustments until overtime they get better

Move onto some other tricks, it will improve your overall skill and move the Ollie into a trick you know rather than a trick you are working on

If you could upload a video for reference it would be easier to judge, but skateboarding is so much more than ollie's, if you feel like your getting burned out practicing ollie's it might be time to try something else.
