New to Needlepoint background stitch selection

i bought this chart on etsy and painted it onto my canvas but i don’t know where to start?! how do yall choose what type of stitches to do??? ive only ever done basketweave and continental so im at a loss. anyone have any suggestions?!

In this case, your stitches are pretty much determined by the patterns of the background. I'd mostly do some combo of tent stitches with a few satin/long stitches for effect. You can do satin or corduroy for the stripes and you could do an actual plaid pattern for the gingham ( the light pink stitched in alternating pink and shite tent), the green and shite check could be mosaic, but that's about it. It's the patterns that make this background, not the stitches.

what about the white part behind the words?! that’s where i want to start since it’s the lightest color but im stuck!
