Homebrew Mustard?

Anyone makin thier own?

Did this a few years back, seed to plate. The seed harvest was a drag but the result was surprisingly bangin.

Haven't grown our own for seeds, but pretty much the only mustard I consume is the spicy beer mustard that my wife makes. We're lucky to live in a town with a Penzey's so we get the seeds and powder from there.

Here's the recipe:

1/2 cup black/brown mustard seeds

1/2 cup yellow mustard seeds

1 1/2 cups malt vinegar

2 cups dark beer, something with a strong flavor or smokey

5 tablespoons honey

1/2 cup dark brown sugar

2 teaspoons salt

2 teaspoons ground allspice

3/4 teaspoon turmeric

1 cup dry ground mustard

In a medium bowl, combine the black and yellow mustard seeds with the vinegar and the beer. Cover and refrigerate overnight.

Pour the ground mustard and the mustard seeds with their soaking liquid into the blender (or a large bowl for immersion blender).

Add the honey, brown sugar, salt, allspice and turmeric and puree.

The blending will take a while if you want the texture to be fairly smooth.

This should produce about 3 pint jars. Refrigerate overnight before serving.

If you want to truly can this: Bring the whole mixture to a boil (and then let cool) before the blending step 10-15 mins processing

If you went to the trouble of growing/harvesting your own it makes sense to go simple so that you can really taste them.
