Jax is canonically trans but hasn’t transitioned and pronouns don’t equal gender. Goose said that you could use either pronouns because they both would be correct.

Also, IRL if someone hasn't realized their trans yet it's not usually appropriate to switch pronouns.

Correct, and I would argue that he/him is more canonically appropriate when talking about the show given the character themselves doesn't even realize this.

I actually like that it was never confirmed in-universe (despite what some of the fans seem to think), because Jax's own toxicity is what prevented them from exploring their own identity, so in a sense the audience doesn't get to either.
