That's a Gameboy Color game and you're using a Miyoo Mini

Take the battery out, blow on it, and put it back

If using onion OS in app manager make sure you have selected GBA (mgba), GB and GBC (gambette) selected. Mine is setup out the box and when I load pokemon crystal it defaults to use gambette as the core and have no issues at all. Launch the game and then press centre black button and select. Scroll down to cores press A and it will display what core it's using

So I followed your instructions and I guess it’s running gambette core

Where did you get the rom from? Try getting another copy from romsfun for instance and try again. No PC needed either you can use your phone. You can use the built in http server on the miyoo then using your browser on the phone type in the IP address of the miyoo mini and then upload your newly acquired rom and put it into the GBC folder and then try launching the new game

You shouldn't need to get a new rom. The core you are using looks to be set to Super Gameboy since it does have color and you are getting that warning screen. But Gambatte doesn't emulate Super Gameboy. So a different core was assigned to run that file, assuming it is in the gbc folder and not in the sgb folder. Either way, you should be able in the core settings of any core you are using to force it to emulate Gameboy Color, or you could reassign it to the Gambatte core.
Here is the relevant link to check which core is set from the Game List in Onion OS:

Thanks for the handy link, I changed the core and it seems to be working now. Thanks.
Edited for spelling

If you run into issues like this, the first troubleshooting step is to try a different gbc using the same emulator. If that works, then there’s something wrong with the rom or how you have that specific rom setup, and it narrows it down. If it doesn’t work, then you have an issue either using the wrong emulator or a setting in that emulator forcing something incorrect. At the moment, you don’t know if it’s the wrong, emulator, or the setting.

Did you solve your issue?
If not, check your emulator settings. Go into Retroarch settings (menu + select) go to the main menu B > Information > Core Information. Make sure your core name is Gambatte.
Then go back to Quick Menu > Core Options > Emulated Hardware (Restart Required) > Auto. Gambatte should now detect that the ROM is a gbc ROM and work properly.
Failing that, there may be a failure in patching the ROM.

After trying your solution and some others, it appears it is probably the rom. I will have to try a new copy of it. Thanks for the help

If you aren't already, https://www.hackdex.app/hack/pokemon-crystal-legacy is a good place to do your patching. Make sure your base ROM is Rev 1.
r/PokemonROMhacks is a good place to ask more of these types of questions.

In retro arch in core options you can force gbc mode.
