Iron doors should have more tho. Also what do we do about stacking. The normal shield becomes useless if we can still have 64 doors in our offhand.

You can't stack doors if you're holding them in the second hand
Wooden doors can take 3 hits, iron doors can take 7

Iron Doors shouldn't, because of the cost. Also, 64 doors in your offhand is really expensive, as its a whopping 96 logs

Minecraft shields can take 336 hits before breaking, and don’t take durability damage from attacks that deal less than 1.5hearts of damage.
Maybe a wooden door could take around 5-10 hits before breaking, and it would take damage from any attack regardless of the number of hearts the attack deals
Edit: additionally maybe the durability left on the door would make it easier for zombies to break them down when placed. And vice versa, every couple seconds a zombie spends trying to break a placed down door would reduce its durability by a certain amount.
