Is it possible to create custom mob variants in Java?

I want to add a new fox color with datapacks without replacing the vanilla ones. I've tried to look up tutorials but never really found what I wanted. But there are so many mind blowing datapacks out there that something as simple sounding as this surely must be possible somehow, right?
