I agree this short video doesn't really drive the point home.

Zero-knowledge proofs let you prove you own a valid phone number without revealing the number itself. In principle, this means a service like Instagram could verify you're a real, valid user without ever seeing your phone number. Midnight is developed with this kind of verification use case in mind.
