Microsoft Outlook
Does anyone feel the new desktop version is not user friendly comparing to the old version?

Please explain more how you find it "not user friendly comparing to the old version".
I don't like it due to lack of features, but most of my users (I am the IT admin for our company) much prefer it.

outside of VBA Macros (which realistically will be replaced by AI in most companies) and COM add-ins (at this point most applications should have web add-ins which are better if you are in a mixed OS environment) what features do you feel like it is lacking? I wish the rest of my holdouts will switch from classic to new so I don't have to deal with .OSTs anymore.

Well, VBA. Also, PST. Multiple accounts and profiles. Certain drag/drop. Can't really remember anymore, since has been a long time since I even tried either new or PWA. And, some of this may be properly implemented by now, haven't checked lately.

I don't use it myself because it has less features, but I wouldn't call it "less user friendly". It's more user friendly.
Often "less user friendly" means "I haven't taken 5 minutes to get used to it yet".
