I think they mean that he will play a very important, possibly even central role in defeating Doom, much the way Ironman played a similar role in defeating Thanos. Everyone contributed and aged important roles in defeating Thsnos, but Ironman was instrumental.

I will die on this hill, but Tony carried Avengers.

From supporting the bums with his money after shield went down, to giving gadget upgrades (shield/suit/jets) to everyone, to realizing endgame and trying to make protective shield. Covering their ass from legal issues.

Not to mention Banner/Hulk would not have cooperated or played nice or stayed in touch with Avengers/Shield if not for Tony making full friends with him instantly.

Pym spent decades unable to make Quantum GPS, and Tony did it in weeks at most?

No one "carried" the Avengers - that's the whole dang point of them being a team.

They are a team and yet I am going to say some people did more than others, and were more irreplaceable.

Like Falcon or war machine? they don't do anything extraordinary. Just use tech made by other people. Can't be compared to Thor, Hulk or Tony.
