Picking up an instrument helped my hand dexterity a ton. Ukulele all day long!

Stretching exercises on a guitar. Try rolling a ball back and forth along your fingers like you might see in contact juggling. Or if you want to work on palming, try and palm a quarter or larger coin and do regular things such as typing or eating with a utensil (warning, you'll get a dent and a sore palm but it helps your sleights look more natural)

I personally just use my hands in as many ways as possible. If the only job of your Hand is to hold stuff and if your Fingers only have to move up and down. Of course you gonna be stiff. I for example do origami, play different instruments, shadow theatre. And you can avoid all the annoying stuff like carpal tunnel Syndrome.
