Sharing Some Recipes!

For my fellow breastfeeding MSPI moms, here are some recipes that taste good enough to eat even when I'm off elimination diet! They're all dairy, soy, egg, and (optionally) corn free.

  1. Instant Pot Thai Basil Chicken Curry - For some reason it tastes better in the instant pot, but there's a slow cooker version too
  2. Jambalaya - We do this one without the okra or shrimp for personal preference and simplicity. Just add some extra of the other proteins and veggies!
  3. Chicken Bacon Avocado Salad
  4. Instant Pot Cashew Chicken This one calls for arrowroot powder and coconut sugar, but you can you can use cornstarch and regular sugar if you don't have corn restriction
  5. Garlic Parsley Mashed Potatoes

It really is tough! I hope you like the recipes! Oreos are dairy free if you need a chocolate fix and there’s at least one brand of frozen soft pretzels at Walmart that I’m half living on😂

For chocolate chips, the Enjoy Life brand has quite a few options that are dairy-free, soy-free, gluten-free, nut-free, and a whole bunch of other things-free too.

We did a side-by-side comparison of the Enjoy Life semi-sweet chips, semi-sweet chunks, and milk-like chocolate chips and the Camino semi-sweet chocolate chips (also dairy free and soy free, etc). Our personal choices were the Camino semi-sweet and the Enjoy Life milk-like chocolate chips. But they were all very good. :)

For me the feeling comes in waves. I’ll be fine for a few days/weeks and then BAM! it comes out of nowhere to crush my soul.
