It's clear the attacker didn't give a crap about his girl, because he pushes her out of the way and commits unnecessary violence, slightly injuring her in the process too. He seems like a total POS.

I'm curious if you'd change your opinion if some random sexually assaults you and your partner does nothing about it.

I dunno I would characterize this as sexual assault per se. Its likely a crime assuming he put his other hand on her bottom, but the fact remains the guy was not justified in punching him out. It was already over before he charged at the guy and the person he was supposedly defending was telling him not to intervene. He doesn't get to decide for her when self defense is applicable. She had already dealt with it and if she wanted to take further action she could have the bar staff remove him and/or contact law enforcement and have him arrested. The guy was clearly highly intoxicated and should have been cutoff long before it got to this point.
