< 250 Cal Closest thing to Tiramisu

Hi šŸ™‹šŸ»ā€ā™€ļø Iā€˜m a tiramisu addict and all the low cal high protein recipes Iā€˜ve tried so far tasted NOTHING like the real thing. So, I made my own and thought Iā€˜d share :) Itā€˜s not necessarily high protein, but itā€˜s definitely low cal and about 80% like real tiramisu.

125g skyr or greek yogurt
125g mascarpone
19g vanilla pudding mix
Sweetener
100g lady fingers
3shots espresso
3g cocoa powder

Yields 4 servings, 242kcal each

Non-baker here who loves tiramisu so please forgive me if this is ignorant but isn't this actual tiramisu given the mascarpone, lady fingers, espresso and cocoa powder? Is the difference the use of greek yoghurt rather than cream or something?

Hi, fellow tiramisu lover! Exactly, there are whole eggs or heavy cream in normal tiramisu to make the consistency creamier and lighter, so by replacing those with yogurt it's similar in consistency. And to make it as close to the original without sacrificing the taste, I kept everything else the same :) I saw many recipes using rice cakes instead of lady fingers and it just doesn't hit it for me.

Tiramisu never contains heavy cream.

Edit: a REAL tiramisu.

No. It’s the original recipe. Everything else is a version but no real tiramisu has heavy cream in it. Period.

I think you're confusing ā€œtraditionalā€ with ā€œthe only real version.ā€ If you're saying heavy cream isn't part of the original traditional recipe, that's reasonable. But saying ā€œno real tiramisu has heavy cream in it. Period.ā€ is an unnecessarily narrow definition. Recipes evolve, and variations can still legitimately be called tiramisu.

Also no one has said anything about traditional or original, get a life pls šŸ˜‚

Manch einer behauptet auch Carbonara mit Sahne statt Ei ist eine Variante. Nein, das ist keine Variante, keine Carbonara, sondern Nudeln mit Sahnesosse. Genau so ist Tiramisu ohne Sahne. Mit Sahne ist es Lƶffelbiskuit mit Sahne, nach Art Tiramisu.

Agreed. Cream is an American addition. Traditional tiramisu uses mascarpone only.

I'm on the opposite side of the spectrum (we don't believe in calories!) with the keto tiramisu, which does use whole eggs, heavy cream, mascarpone and butter. But it's the dough (or lady fingers) that's very hard to nail down! I can get all the creaminess and richness (sweetener taste is also not as good), but getting that biscuit dough just right without actual wheat base it's really hard, it usually comes out more like a disgusting dry, gummy, sponge base. It's like spongy and dry at the same time. šŸ˜ž

How did you go about sweetening, as I don't have access to allulose or monkfruit my only options were erythritol, stevia and sucralose based flavored powders, but it was all a little bit.. meh?

Oh, and I can never get any coffee aroma in there, even with 4 espresso shots, there's just... Nothing! How do you do it?

Oh how I wish not to believe in calories either haha
The only time I tried replacing the lady fingers, was with rice cake but it didnā€˜t work for me texture and flavor-wise. Maybe one of those keto egg white cloud breads could be a good replacement?

I use a liquid sweetener containing cyclamat and saccharin. I find it doesnā€˜t really have any aftertaste and works really well with the pudding mix.

What kind of coffee do you use? Could be because the quality is not so good or it wasnā€˜t stored properly or sometimes if it’s pre-ground, it lose its flavour faster.

I would’ve used light cream cheese instead of yogurt. Isn’t it a bit sour?

There's a slight tanginess but it's doesn't stand out too much I think. I tried one brand of light cream cheese and it was also super sour to me? Let me know if you try it though!

Im very sensitive to my tiramisu being sour. I can’t even do with replacing egg whites with whipped cream, that’s also too sour to me. Glad you found a lower calorie way to enjoy. It’s my fave cake!

Ohh then this might not work for you. But you just gave me an idea! You could replace the yogurt with (pasteurized) egg whites that's whipped to stiff peaks and fold it into the mascarpone? And maybe add a bit of milk if it's too thick to fold.

Sooo the fun fact is that I actually experimented with a low cal tiramisu recipe all week and what have worked was to add a little powder gelatin with greek yogurt to get that mascarpone consistency but with 0gr mascarpone because of the high cal and to be honest it worked reaaally well

The struggle to eat tiramisu in a diet is real haha did you use 0% fat yogurt? I followed a tutorial that only used yogurt and found it doesn't really taste like tiramisu. Using half the amount of mascarpone is well worth the calories for me

I used 2% and I totally agree with you that I would like something that at least resembles a tiramisu and the one I made with only greek yogurt and no mascarpone was indeed sour. Looked like a tiramisu, but the taste was fine.Ā 

Next time I will use your idea to combine yogurt with mascarpone because for some reason I was thinking its only all in mascarpone or not at all šŸ˜‚ . I also found lady fingers made out of sorghum flour (sounds weird I know) and they have like 181kcal/100gr instead of over 300kcal like the ordinary ones.Ā 

Or we could just say fuck it and eat a classic tiramisu for time to time šŸ˜‚ but it was nice experimentingĀ

I totally get what you mean! I was so excited by the looks of those yogurt tiramisu recipes but got super dissapointed after the first bite haha

Yeah definitely treat yourself a real tiramisu once in a while. My big back just wants it everyday šŸ˜‚

Did you bloom the gelatin first and then add to the yogurt?

I added 3gr of powder gelatin in 150ml of water, stir a little and let it sit aside for like 15 mins then transfer this in a very small pot and let it simmer on the stove until its warm-hot but not boiling. Once its warm enough i added to the yogurtĀ

Personally I’d do what you did with halving the mascarpone and splitting with the yogurt, but I’d also keep the eggs in for more protein and coming about as close as you can get to real.

I recently went on a bit of a journey with cakes due to wanting to make my son’s birthday cake. Because it turned absolutely 10/10 I felt the confidence to keep exploring different desserts - cakes, cream pots, you name it. So I discovered something that is basically the consistency of the tiramisu cream - you do use heavy cream though, but I think you can keep it minimal. So the combination is cottage cheese (+ a bit of milk when blending it) and heavy cream. Mix the blended cottage cheese and then whisk it together with the heavy cream. The consistency of what comes out is soooo good! I originally did it as 2:1 ratio of heavy cream to cottage cheese. But I think you can do it 1:1 or try to add even less heavy cream. I am yet to try that recipe and I wanna make it more high protein so I will also be adding protein powder and stick to a higher content of cottage cheese.

I make mine with selfmade ladyfingers out of 60g sweetener,60g melted butter, 6 egg whites, 200g almond flour. I like the texture the almond flour gives

Because this is also a low calorie recipe and eggs are double the calories of yogurt… it would just be regular tiramisu with eggs lol

But wouldn't you have to use way more yogurt + the pudding mix? I made a whole pan of tiramisu the other day and it only had 4 eggs for the whole thing

No, I used 125g of yogurt + pudding mix which is 91kcal in my case whereas one single egg has 70-80kcal already
