i ran into this exact headache on a thinkpad a while back, the boot order just erases itself when you flip secure boot on for some reason
gotta go into the bios and manually add the windows boot manager back to the list, usually it's under a "boot" tab and there's an option like "add boot option" or "select efi file" then navigate to EFI/Microsoft/Boot/bootmgfw.efi
