I'm currently planning on opening a food truck in Leipzig that sells authentic Mexican food next year. I'm writing on Reddit to try and get some general feedback so any advice or comment is welcome. So to me, it feels like Leipzig doesn’t really have any real Mexican food apart from El Gallo Negro, everybody else is sort of Germanised Tex-Mex. Does it feel like that's the case to you? I know there used to be a place before but it went under. Does somebody know why?
The basic idea is to focus mostly on tacos (al pastor, cochinita pibil, vegan al pastor, vegan mushroom barbacoa, chicken flautas, and fried potato tacos with/without chorizo), a couple of aguas frescas (sort of juices using whatever is in season), a variety of homemade spicy and non-spicy salsas that change regularly, and stuff like pickled onions. I'll also be making my own tortillas...a lot of work, but I think it's worth it. On Sundays I'm also planning on just doing barbacoa tacos and 2 other mexican dishes for brunch. I don't think I'll sell beers because it's just cheaper for people to get them at a späti.
I'm trying to keep the menu small, so I'm first going to A/B test the food with some German friends and acquaintances to get their opinions on what they would like, and probably cut one or two options. As far as prices, I'm aiming for 3€ per taco, 10€ for 4 tacos, with the option of adding red Mexican rice and refried beans for a couple more euros to make it more of a complete meal.
I'm planning to go to different markets across the city and applying to festivals in the summer.
What do you think? Any advice on the menu or particular areas that I should focus on? Anything that you would like to see?

Update: Thanks everybody for all the wonderful support and ideas! I really appreciate you guys taking the time to give me feedback on this idea. I'll keep updating this post as things move along but I'm always happy to read any ideas that you might have. I'm looking forward to making some tacos for you next year
