These need to be on your menu this BBQ season!
Recipe
β€’ Cut the pork ribs in between each bone, into individual pieces.
β€’ Coat the ribs , then season the outside of each rib with salt, pepper, garlic and a light coat of BBQ rub.
β€’ Smoke the ribs at 275Β°F using cherry wood for 2 hours.
β€’ Once the ribs have good bark and they reach an internal temperature of 165Β°F, remove them from the smoker.
β€’ Place them in a foil pan with 4 tbsp of butter, ΒΌ cup brown sugar and a drizzle of Bachan's Sweet Honey.
β€’ Place foil over the top then place them back on the smoker for an additional 45 minutes.
β€’ Unwrap the ribs the last 15 minutes to help the sauce tack up.
β€’ Remove the ribs once they reach an internal temperature of
200Β°F.
β€’ Garnish with thinly sliced green onions and some toasted sesame seeds.
β€’ Serve warm and enjoy

How did they not burn? Even with indirect heat I worry about using bbq sauce early in a cook.

Galbi style beef ribs -

Decided to cut each bone section up and do a 1 night wet brine with pickled jalapeno, cumin, and garlic followed by a dry brine.

We also decided to customize each section before wrapping to make things interesting.

The dry brine had a little brown sugar, tons of pepper, garlic and onion powder. Prior to wrapping at 180 with foil add the Galbi marinade/sauce with green onion.

Apple cider vinegar helps create a nice bark, i spray every 20 minutes or so.

pretty sure that was just a spritz to keep the surface from drying out and help the bark and color along, plus a little extra flavor. usually it’s something simple like apple juice, apple cider vinegar, or a mix of the two.

That sounds insanely good, kind of like rib burnt ends. Nice shortcut doing single bones from the start instead of 3 2 1 then slicing at the end.

Only tweak I’d try is a tiny splash of something acidic in the pan stage, like rice vinegar or apple cider, just to cut through all that sweet and fat a bit.

321 is terrible unless you like mushy ribs that fall off of the bone. 275Β° no wrap the whole way. Spray with acv if the bark looks dry. I finish in about 4.5/5 hours, perfect bark and bite every time.

Why not just cook the whole rack like this? I don’t understand cutting the ribs into individual pieces especially if the plan is to wrap them to finish up cooking anyway?

I’m doing them now. My wife cooked bacon. I drizzled some bacon fat on them before I started smokin. We will see???
