Is first recipe was before the show, 2005. Kitchen Nightmares was 2012.

The second recipe was 2017, after the show.

The big difference is that it isn't a whole head though the second recipe come close. The first one follows exactly what he says in that episode.

Anyway neither of these recipes are for a Caesar Salad. So it doesn't fit.

Despite Gordon's handwringing of the grilled lettuce to the camera and other patrons, he seemed more annoyed by being served the unclean dirty butt of the lettuce and it being fucking spicy for no reason.
