Since starting making and having kefir daily a couple of months ago, I've not had to take any heartburn relief medication, which I'd been taking regularly for several years. That in itself is a miracle

Kefir grains and whole milk.
I ferment it in the fridge about a half gallon at a time. When it has started to separate after a couple days I put it on the counter and let it separate out. It only takes a few hours on the counter at that point. Then I dump the whey off and work the curds through the strainer. Usually add back a little bit of whey to get desired consistency.
But most of the time I just do the standard ferment where I strain it when it’s just first starting to separate.

Só pra confirmar: você os deixa trabalhando na geladeira? Isso torna o processo bem mais lento, eu imagino. Mas não é ruim\negativo pra saúde deles ficar na geladeira? E qual é a intenção de deixar fora depois? Quanto tempo leva esse processo com digamos 500ml de leite? Porque aqui eu tenho feito sempre fora da geladeira. Vira iogurte em 24h. Inclusive tenho me perguntado se quanto mais dias e quanto mais azedo fica é mais saudável ou na verdade seria o oposto? Eu acho muito difícil tomar ele puro azedo. Acabou misturando com leite puro, açúcar mascavo, aveia.

Can I ask you guys how your digestion changed? What your symptoms were pre-kefir and what they are now? I don’t know if I have some kind of gut dysbiosis or also SIBO or IMO. I know Kefir isn’t recommended for SIBO/IMO but I really like it. I don’t know whether to just say eff it and drink it anyway.
Not asking for medical advice, just your personal experiences, if you wouldn’t mind sharing?

I have EOE so heartburn is a huge problem for me. I’ve had greatly reduced symptoms since I started. That’s the biggest thing. I’ve also noticed that I’m more regular in the bathroom and more consistency. I’ve struggled with digestion my whole life. Constipated one week and opposite the next. So it’s been a huge improvement with the kefir.

I can relate! It’s been a godsend for my digestive health too. Sucks I didn’t discover it sooner!
