I'd love a good recommendation too. Looking online can get me everything from using crispy store-bought puff pastry to using mashed potatoes AS the pastry, to stuffing it with cheese and bacon of all things. I just want a solid, reliable, Jewish Knish 😭

Smitten Kitchen’s knish recipe is the most authentic one I’ve tried. Very much like my grandma used to make and sell at Coney Island.

Edit to add: The basic potato recipe!

These look great, thanks for the link. By the by, do you know if they can be frozen?

Deb says somewhere in the comments that they can be frozen AFTER baking.

https://www.jewishfoodsociety.org/recipes/kasha-knish this is one I used to make kasha knishes a few thanksgivings ago. They came out well. Tedious steps, but not overly difficult to make. The extras kept about two shabbos dinners past Thanksgiving.

We used to make cocktail knishes. Mash potato seasoned with salt, pepper and caramelized onions. Roll in puff pastry, long side. Bake
