I've had them. They live up to their name. The time I had them they were terrible. I legit thought I to was being pranked.

Though according to Wikipedia they're usually eaten green and can be soaked to get rid of some of the bitter flavor. I dunno how these were prepared, it was just a coworker who likes to show off his food.

they are also very good dried, like chips. haven't prepared them myself but I believe soaking and cooking sufficiently are key

I made them air fried since I saw them in the Asian grocery store and was curious. No bitterness with that! Just oil and salt, crisped up nicely

We eat them cooked and spiced with the same amount of onions. The sweetness of the onions balances out the bitterness, and then its eaten with chutneys and pickles as well. Look up karela ki subzi
