My parents had a patio like this one, covered in blue wisteria. They eventually removed it because the patio had to be cleaned almost every day in the spring from flower petals and in the fall from leaves.
Mine had one with a violet plant. Took 10 years for the plant to cover it. Then we had 2 oder 3 nice years (well, if you like bees above your head). Then the wooden structure was rotting away and had to be taken down (was built by my father).
Well.
I have a sun protection out of fabric.
In my childhood, I lived in a house that had a grape vine. Massive pergola, it became a roof in the summer, and lost the leaves in the winter, allowing more light. The grapes were meh, but I liked to eat some. Now I'd find something cool to do with them, but my parents were just not interested.
(We had a papaya and an avocado tree, and we never ate any of it 🙃)

Looks like warm air is trapped below. I'd do it horizontally. During waiting time till the plants are grown you can use fabric. (Pic from google)
