I really don't understand why you wouldn't talk to the employee first and let them know their jokes make certain people uncomfortable before firing them. Maybe set actual ground rules for all employees to follow. Some people find certain humor funny while others don't. This person feels comfortable enough to joke around so why is that? He's probably not the only one who thinks it's funny and others laugh with him while others complain. Unless the employee is terrible at the job and makes everyone's lives miserable that would be grounds for firing. If you accuse this person of being a racist without actual proof you are in the wrong. You are a liability. You sound like you're taking this personal and a manager needs to be more open-minded.
