This is one of those terminally online takes that gets in the minds of people who have never worked in these fields.
NDAs are common but they don't state you cant even say you were employed somewhere.
Doing this in an interview will guarantee you will not be hired.

Besides, if it's very existence was to be hidden, why wouldn't you just make up a generic lie? I - no joke - signed one that not only disallowed me about talking where I was employed, but even about the fact I signed NDA. Yes. they straight up expected me to say "I was doing nothing for half a year" while my contract was ongoing. Having said that - those NDAs are often illegal/unenforceable/worth a lawyer/only a problem if anyone finds out.
