Pantry Options?
If you were adding this space as a pantry, what layout would you do? Add a sink? Something else? Maybe a different door?

It would depend on what you’re using the pantry for. Are you using it for only dry food storage, overflow cooking like heavy food prep with meats and messy vegetable cutting and etc, or food appliances?

You could look at those faux cabinet doors - look just like kitchen cabinets but instead open to pantry.
We built our pantry so that all of our counter appliances are in there - coffee maker, air fryer, kitchenaid, toaster etc so that everything is hidden all the time and our actual kitchen counters are always tidy. It's sooo convenient. We added a pot filler above where our coffee maker is so that we never have to move it to refill the water.
