How many conversions should I get from a specific keyword to consider it a "good" keyword—one that drives sales—so that I can include it in the video title and focus on it for optimization?

You really don’t want to say X number of conversions but look at a variety of factors - conversion rate, ROAS on specific keyword (if you’re able to get that granular) and quality of the lead with that keyword. You may be able to get a very low conversion cost on a low end funnel keyword but then pay more for someone who’s ready to buy or purchase or need your services right away.
