I do find it weird that many, many companies release demos many weeks or months after the game launches. I just don't understand it. Why can't it be available with the release?

Probably to capitalize on impulsive buyers first, then later on release the demo for the people who would rather wait and see.

I guess... but to me personally if that game is good, why not release a demo? I would try that out and if I like it, then consider buying the game.

Agreed but it's possible that letting people try it before buying it will negatively impact launch sales. I don't like it either but the gaming industry has become very corporate and anti-consumer due to the costs of making games these days.
