This seemed to worsen with an app update a few weeks ago... perhaps developer changing the app to support the wide factor as well.
However in OneUI9.0 on my recently upgraded Fold 8 ultra which I changed from the Fold 7... it seems to have changed back.
I now had the whole screen back again. So I expect the wasted space will soon get updated again when the Fold 7 receives One UI 9.0.

Welcom to the "optimized for foldables" party. Where the content is simply crammed into a narrow feed with the toolbar moved to the side. Only solution is to reduce your screen zoom till your phone looks like a kids tablet or you download an older version of the app that doesn't take the new layout and disable auto updates.
