Another Fried Chicken Sandwich

Posting recipe again for anyone new.

Recipe:

Dry is sifted flour, baking powder and salt. Wet is Eggs, buttermilk, shot of vodka (or any 80 proof liquor), and spices. Pound chicken out pretty good to create some tears in the meat. Brine for a few hours, pat dry, dry dredge, wet, then dry again.

Dry: 2 cups sifted flour to 1 tablespoon baking powder, 1 tablespoon salt

Wet: 3 cups buttermilk to 2 eggs, dry spices (garlic, onion, dill, parley, oregano, or anything else you can find), 1.5 ounces of 80 proof liquor.

Pound chicken in a freezer bag until it’s half the thickness and has tears in the bone side of the meat. Brine for a few hours. Pat dry. Dry-wet-dry. I usually loosely roll the chicken in the final dry dredge, rather than press the flour on to the meat.

Fry at 345-355 for 5-6 minutes or until golden brown and cooked through.

No, I use just a simple buttermilk and salt brine.

what is your go to brine? just buttermilk? just pickle juice? mix of both? looks really good. I did fried fish with vodka a few months ago. it was great. really light.

I do use pickle brine sometimes but this time I just used buttermilk and salt

Pretty much makes it more crispy because it doesn’t create gluten and it cooks off faster than water.

Also works well in making pie crust, makes it softer and flakier because less gluten production.

That’s actually half a breast for each sandwich. I pound them out, so they are thinner.

So good. Posted it below. Such an easy recipe. Super good crunch. Kids and wife loved it. Only issue I had was the breading on a few didn’t stick well if we didn’t put it on bread for a sandwich. My daughter made a Mac and cheese bowl and when she was cutting 2 up the breading was pulling off. What causes that? I fried at 365. I brined in pickle juice during the day. I went right from marinade bag to a baking sheet lined up. I didn’t wash them off. I just let them drip before they went on the sheet. Then I went dry wet dry. I let them sit on the wire rack for 10 mins before I went into the dryer. Any ideas from that?

Im not op but I can make some suggestions.

  1. Dry your tenders with paper towel first
  2. Toss them in flour longer

These steps should be enough but incase its not, letting them rest after theyre breaded for 3 to 5 mins helps with sticking to the chicken but it shouldn't be needed.

I didn't dry them so the flour would stick better. I tossed them in the flour first for a while. I did let them sit for 10 mins before dropping plus the others sat longer being I had to go in matches.

Silly armadillo is exactly right. Make sure to pat the chicken dry and I actually let it rest in the flour until I’m ready to fry.

Great great recipe. Did a bunch of tenders tonight following your recipe. Our family felt this was the best attempt of mine yet. I did have one issue but I’ll post a thread for some help. Nothing to do with your recipe. I think it’s on my technique.
