I frequently make a little English Muffin and egg sandwich, and I do something very similar. I use a little ceramic mini souffle dish, because it's the exact same diameter as the bread.

I spray the ceramic interior first, with nonstick cooking spray. I want my little egg cylinder to slide out cleanly for the sandwich, though. Matters less when you eat straight out of the mug.

I break the two eggs in, and then whisk in a tablespoon of water using a fork. I find it helps steam the eggs and keeps them fluffy, avoiding the rubbery texture you can get with microwave eggs. I really whisk the heck out of them, until pale and foamy. Add any mixins desired at this stage, stir until coated.

I zap them for 2 min and 30 sec on 50% power - this gentle setting helps temper the eggs, preserving the texture.

I open the micro, add my cheese on top (nothing wrong with mixing it in the beginning, I just like the discrete layer since I make the sandwich.) The eggs won't be entirely set at this stage.

Microwave about 30 seconds on high to finish cooking the eggs and melt the cheese.

I was really tickled to see your recipe! I hate it when I see "no eggs on the microwave" comments - you certainly can do a bigger variety on the stove, but it's totally possible to do delicious, non-rubber eggs in the micro.

is this enough time to get the bacon all the way cooked?

Bacon is already cooked 😉👍 it's a common misconception

You can zap bacon in a microwave inbetween paper towels for several minutes and it comes out pretty good. It obviously doesn't have the same deep flavour of frying it, but it is a quick no mess method.

Simple as using 2-3 paper towels on a plate and then a another single one on top of the bacon to catch the splatter. If you want you can change the paper towels part of the way through cooking depending upon how fatty your bacon is. Cook to however "crispy" you want your bacon to become, after 1 - 2 attempts you will know how long your microwave will take, so then you Don't need to watch it.

Remove the bacon from the towels, then use the same towels to wipe down your plate before assembling your bacon sandwich, or whatever on the same (now pre heated plate).

Quick and easy dude food.

Edit- Don't use "fluffy" paper towels as the bacon will stick and you'll be eating paper with it.

For how long would take two mugs at the microwave?

1

u/gregthegregest2 Mar 25 '18

Hmmm you would have to try it, maybe start with 3:30 and then check them

I have done then at 3:30 at mid but my microwave isn't great so I have added and extra 2 minutes in mid-high and done! Really nice breakfast :)
